On Saturday I walked four miles of the Water of Leith Walkway - sadly this included possibly the dullest bit from Roseburn to Slateford. Next weekend I intend to go via the canal to Slateford instead, and Jon has said he'll come with me.

Where online can I get maps of Edinburgh which show places I can walk? Google maps don't show footpaths or the canal and neither does Multimap :-(

Try the tourist board website or failing that go in and ask them, the right to roam thing should mean that there are new maps showing the places the public have access to.
